As far as the depth of the fight system:
I get the feeling this will be a lot like Blade Strangers. It appears crazy plain and shallow at first, but once you know how the game moves, and understand it's structure, you'll see people build gameplay around it's systems. Rather than complaining about how it doesn't work like everything else out the box. Use and storing of items for combo breaks and control, tagging, and meter management will bring it a different pace as it evolves.

SNK / NISA really are dropping the ball, by not having the DLC plans more in place and visual by now. Just the very worry that the lack of more details might mean we'll be paying more than expected within days of release isn't a good look. It's not like there haven't been enough web specials and trailers to provide these details, either. I enjoyed the panel at PAX, but definitely felt like a few more paragraphs of info could have been shared.
Oh, and the news of the Switch versions poor performance, and lack of communication about it, really makes no sense. If it was going to be so flimsy, why not get out ahead of it, and let people know the target of performance? Hiding it until others can unveil such details feels scummy. Not a good look for any of the companies involved. I think the closest we got is something about how both platforms were challenging to develop for. I mean... yeah, needed a LOT more than that!
On the positive side, I have to think the silly screenshot function will get some decent use, once people notice it's there. Using it with "SNS" services to header any SNK related post for a good while (especially with screenshots of SNK's offices included) should give it some actual purpose. I can think of so many times, when a character is buffed / nerfed, that I'd like to be able to show their reaction to such a thing. As much as streamers like to put unique title cards on their videos, and cosplayers like to imitate in-game poses and situations, it's something I don't think a reviewer would appreciate, but a fan will probably find themselves using more than expected.
I also look forward to seeing how far Co-Op goes. I saw one review mention how playing it co-op locally helped him feel that he got his worth out of it. I don't think I've gotten the option to even attempt this since... SF x Tekken? It's honestly a thing I wish games like CrossTag Battle and others would add to their feature set. The possibility of doing the same online is great too. Part of why PlayStation All-stars was a hit for me, was because it let my brother and I play online as a team, from the same console.
I don't think any reviewer has ever changed my opinions on if I buy a fighter, because... they often know less about them than I do, when they release so early. And Maaahvel VS Capcom 2 REALLY taught me that some of these games won't reveal what they really are, for weeks, if not months on in. A 10 with friends can be a 6.5 when all the cheapness sucks the fun out of it, online or off. And then THAT 6.5 can become a 9 or 10 again, if you're willing to embrace the discoveries. It feels akin to judging a Lego Set by reviewing how it's pieces look loose on your floor. You can judge how well the pieces generally fit, and if they're the right color, but those are just surface-level concerns compared to what it's like once it's all put together.
