Now that we got a dolphin Pokemon, what other "holy grail" of should-be animal Pokemon are there?

Is there an Ox Pokemon yet? Closest thing I can think of is Taruos and Buffulant (or however you spell it, gen 5 normal trainer ace in the drayano hacks) which are bulls and buffalo respectively. Could see them doing a Paul Bayuan riff if they ever do another US state inspired region.

Interesting story here.
So, I did some research and in Japan some areas refer to tanuki to mean raccoon dog, but in other places it can also refer to a badger. So that seems to be the idea...raccoon dog to badger. So then the western Galar one is a more western-y idea of a raccoon to a badger to a honey badger.
Zoroark is a fox, which in Japan have similar powers. We don't have a mystical tanuki Pokémon though.
But then where do legendaries come from?

Yeah, Zoroark is full-on trickster fox, rather than tanuki.

One Pokemon for every fucked up thing that ants do or that happens to ants.
An ant Pokemon that kidnaps the young of other Pokemon and raises it as their own.
An ant Pokemon that deliberately destroy the biodiversity of forests by injecting plants with toxins.
An ant with a poison stinger that feels like you're getting shot.
An ant that actively controls the gene pool by killing fertile women from the wrong caste and their offspring.
And for good measure, ants that turn on their own queen to defend a changeling that imitates the queen better.

Not an animal but yeah grass/fire pepper was one of those "no shit" ideas fans have wanted forever.
Monitor lizards, skinks, stonefish... so many.
Oceania would be a terrific inspiration for Gen 10.

Kind of, yeah. But not as body horror-esque as it could be. Imagine a cordyceps'd Pikachu. Like an even more horrible Mimikyu.
The thing is evil, one of the most interesting typings in the series and they've only given it out twice.
As a mythical pokémon. Could have a nice background storyline: This Pokémon driven into extinction by human behavior, but thanks to recent cloning attempts we have exact one living specimen.

Gonna drop some lore.
The eternal data of Gen 1 and what we've learned seems to indicate Psyduck was designed first, and Golduck came far later...alongside Hypno and Golbat separate from their pre evolutions, and Mewtwo.
I strongly believe the Gol in both Golbat and Golduck is a pun on the Golgom from Kamen Rider Black, and the two alongside possibly Hypno or Mewtwo were designed after Black characters. A lot of early Pokémon were inspired by Toku, after all. One of the Golgom big bads was a bat girl, so there's Golbat, and another was a weird blue fanged cat that could fire off beams and had fhe power of the Stone of the Ocean. That became Golduck and they made it evolve from Psyduck.
Normal/Steel, or even just pure Steel.
Because, you know, "gold".

Actually, go one step further and make it a starter pokemon. Water/Steel.
