The delay is almost certainly the multiplayer aspect. Given the large delays associated with Nintendo's online services, I wouldn't be surprised if they've massively revamped/reworked their online functionality plans over the last year, and that rework has caused delays in developing the net code and functionality for multiplayer titles. It's also my working theory for why there aren't more multiplayer titles out there as of yet.
There were long-form videos of this game running flawlessly through the entirety of Blighttown and most of the first sections of the game weeks before the initial release date, I have a hard time believing it was the core game itself having issues.

The delay is probably just caused by some mismanagement by Bamco. The game is probably ready since months.
The delay could be a result of some marketing "experts" idea that wanted to get double dippers with a late Switch version, or simply some production mismanagement.
