Dark Souls and BB are the essential ones, in terms of unique ideas.
They're all worth playing, but for me, 2 and 3 just feel like variations of their other games, than completely new experiences, and I'm someone who loves 2.

I'll take DS3 over 1 and 2 actually, especially coming after Demon's. It's a much more consistent game than the first, with better combat and better bosses. I would go as far as saying that it has the best bosses out of all of From's games, especially if you add the DLC. Some gorgeous locations too, with excellent level design.

All of that is subjective. Bosses and combat have way too much Bloodborne influence for my taste. Even aesthetically it looks like DS1 levels with a Bloodborne color palette. And the actual level design is nowhere near as good as DS1's.But it reuses some ideas from Dark Souls so none of that counts! /s

I prefer the slower combat of Dark Souls 1. And Bloodborne introduced the whole "2nd phase for almost every boss" which is fine sometimes but can get annoying with how much they do it lately.So basically "The only problem with the combat and bosses is that they're TOO good"? And yes none of the other games have quenched my thirst for exploration like Dark Souls 1. I mean you say those individual levels are better but I have zero memory of them, while I know DS1 like the back of my hand. And I've replayed DS3 fairly recently too.
And no none of the games are bad. And they're all my GOTYs for every year one has come out. DS3 is just the least interesting and least memorable for me.

Poise is fine as is and works exactly as it's intended. It makes heavy armor and weapons viable in a strategic way and not just in a "lol I ignore attacks time for backstab" way.

Sure, if you prefer slower combat and mechanically simpler bosses then I can understand preferring DS1's combat. I understand it, but I don't get it. It's like going back to 50cc in Mario Kart after you're used to 150/200cc.
For the level design, whether or not you personally remember them isn't a very good metric. On average the levels in Dark Souls III have better complexity, density, shortcuts, secrets, and verticality than those in Dark Souls and is only really matched by a few areas in Bloodborne and Sekiro.
It's definitely worth a try. You can watch some YouTube videos for guides to get overpowered quickly.Is the Demon's Souls remake a good starting point for a noob?
