fried bread. its not exactly the healthy alternative, but i love it compared to regular toast and shit. just let it render down in a hot skillet, throw a nice thick slice of bread in there (not your standard white bread, get a nice loaf of rye or sourdough, something hearty) and fry it up. ill usually fry both sides but thats not necessary. usually ill just stick with that as part of breakfast, but if i have all the accoutrements just make it a delivery system for other shit. i recently butchered some ducks and made a duck liver pate, so i carved up a loaf of Italian, made some bacon, fried the bread in the bacon fat, slapped some pate on that, threw on a few pieces of bacon, some white onion, boom. your mouth will smell like a sewer but its delicious.
otherwise, yes, just use it for other cooking things. brussel sprouts is a good choice, fried or scrambled eggs... ill sometimes cook burgers with it (got to be careful about the smoke alarms in my new place, but ill sear them in the bacon fat and throw them in the oven if i cant use the grill). the uses are literally as numerous as your imagination can manage.
