So this will effectively be the 10th time I have owned a version of SF2
I can't decide whether I want the Switch or Xbox version. I like the idea of having a lot of Street Fighter games on the go but I also want to use my Xbox fightstick.

But it shouldn't be that hard to figure out that people would want the basics; vs, training and online. People would still have moaned about the lack of a world tour mode, but unlike something so simple as a training mode (which surely would be useful for beginners, unless Capcom wants to assume everyone is an expert right off the bat) I totally understand why that's missing. At least the arcade ports seem fine? Would love to hear more impressions on it though.
Keep in mind as well that the versions on disc are likely to be modified Roms from the CPS1, 2, and 3 Arcade boards, which never did have built-in training modes.
It probably would have been better off for Capcom to port console versions but then people would complain about the lack of an "Arcade perfect" port. No matter what Capcom does, someone is going to be unhappy regardless.
I think Capcom had the right idea to go with the original Arcade versions of all of the games since this is meant to celebrate the history of the series which gained it's popularity from Arcades to begin with, so I can understand why they did things the way they are. However they are still shortsighted, no online with Alpha 2, training modes for only the online games, and whatnot.
It seems there at this rate there will never be a truly perfect Street Fighter collection because all the current ones including the one coming out next week all have caveats and issues that make them truly stand out, but still every single Arcade SF game from the first to 3rd Strike. Can't really complain about that.

Ahh I see.You're missing the point. Unless the discs were printed already prior to March when they made a mention of the game including Vs. and Training modes, they could have made a decision then and there to postpone the game.

At least the proper arcade ports shouldn't need any patches to run perfectly right off the bat though. Unless they put about as much care into it as the MMLC...
You're setting yourself up for a world of disappointment with all these purist physical disc pipe dreams.
Also, this is why I feel like games should be launched digitally first, and then receive a physical copy a couple of months later when all the kinks have been ironed out.

The point of this collection is for the included games to be as close to arcade perfect as possible, for better or worse.I think that Capcom lost a precious oportunity to make "future proof" versions of these games. I know that this would be expensive, but we should have more definitive versions of some games (specially Alpha 3) and even the possibility to listen to the arranged soundtracks (altought I think the arcade versions are awesome)
