Whenever I cook bacon I save all the grease because that's a lot of food waste to just pour down the drain. I believe in using everything from the animal if you can and that includes the fat. I've used bacon fat to cook brussels sprouts plenty of times but I simply don't eat enough sprouts to use it all up. Sometimes I rub it on chicken when I roast it, but again, I'm not roasting chicken every day.

So, CulinERA - what do I do with all this bacon fat?

Well for one I'd stop pouring it down the drain when you don't use it - let it cool and then throw it in the trash instead.

Only thing I ever use bacon fat for is to fry eggs after I make the bacon in the cast iron skillet. Otherwise it's just not worth holding on to.

Use it to make salad dressings. That's my favorite use.

Oh wait it's liquid fat. Soak it in toast or something.

Edit: to be more serious, my parents used to spread it lightly on a piece of bread as a substitute for butter.

Then again I grew up in eastern Europe so i have no idea if that is normal behavior, I definitely haven't done it in like 20 years.

Cook eggs in it, use it to grill cheesy sandwiches, basically think like a short order chef.

I use it for cooking oil. Chicken tastes good when I use the bacon grease to grill it with vegetables.

Use it instead of butter to grease the pan for eggs. I use it all the time. In small amounts.

You just melt the fat in a small sauce pan, and then basically use that as your oil/fat base.


I like to keep it simple, salt/pepper then usually one acidic ingredient either a little red wine vinegar, or a spicy brown mustard. That one goes really well with spinach salads.

I did a fancier one yesterday with diced habaneros and a smidge of mango juice.

Let's just stop everyone right here and say you should NEVER pour bacon grease down the drain. Unless you really enjoy paying plumbers. You always put it in a disposable container and throw it away when it's full. Which is what you should do now. If you don't want food waste, don't cook bacon.

Use it as the fat for roasting potatoes. I'm a vegetarian but when I wasn't, using duck fat to roast potatoes made them delicious.

Also yeah don't pour it down your drain. It's a nightmare for people to clean it.

fried bread. its not exactly the healthy alternative, but i love it compared to regular toast and shit. just let it render down in a hot skillet, throw a nice thick slice of bread in there (not your standard white bread, get a nice loaf of rye or sourdough, something hearty) and fry it up. ill usually fry both sides but thats not necessary. usually ill just stick with that as part of breakfast, but if i have all the accoutrements just make it a delivery system for other shit. i recently butchered some ducks and made a duck liver pate, so i carved up a loaf of Italian, made some bacon, fried the bread in the bacon fat, slapped some pate on that, threw on a few pieces of bacon, some white onion, boom. your mouth will smell like a sewer but its delicious.

otherwise, yes, just use it for other cooking things. brussel sprouts is a good choice, fried or scrambled eggs... ill sometimes cook burgers with it (got to be careful about the smoke alarms in my new place, but ill sear them in the bacon fat and throw them in the oven if i cant use the grill). the uses are literally as numerous as your imagination can manage.
