Dolsot Bibimbap
Probably the perfect food.
Choose your own toppings usually local veggies, egg, and beef with red pepper sauce over rice
Served in a blazing hot stone/clay bowl.
The bottom rice forms a crusty rice layer which can be eaten seperately or add soup/water for a 2nd course

Broken Rice/Com Tam

A farmers dish, where the rice traditionally used is rice where the grain been broken up in the processing and not good enough to be sold on to market. The texture of the rice is a bit more interesting because of it, a bit more airy and a grainier mouthfeel.

Served with a prok chop, egg, Cha/loaf, Bi/Shredded pork skin, pickled carrots/radish, dipping sauce and cucumbers/tomato. Could eat this every day for the rest of my life tbh.

Shoutout to the dolsot dishes too.

lamb biryani and kimchi fried rice are my favorites

but just throw some charred vegetables and a fried egg on a bowl of rice and I'll go to town

that's, like, 60% of my dinners

I make this dish quite a lot with leftover chicken. Every recipe I've used also calls for Sake too, which is usually the one ingredient I'm missing when I want to make it. I also like a bit of Shichimi on top, and some pickled ginger for some acid if I have it.

I see Risotto was already mentioned, but what about the superior preparation:

From the Egyptian side of my family, Koshari, although it's not exclusively a rice dish as it integrates other key ingredients in equal measure.

There are a billion ways to make this dish- I own Morimoto's cookbook, and his version doesn't even use onions(or sake)! i tend to put a bunch of green onions on it when it's done cooking myself
