If I talked to a lawyer and had everything in order with a contract or whatever, and as long as I couldn't be held responsible/accountable. I'd probably do it.
This is also important and I was about to elaborate on this. There is an extremely common misconception that child support is "money owed from the wealthier parent to the less wealthy parent." This is false. Child support is money owed to the child and the parents cannot waive that. If this couple ever splits up and one of them needs government assistance, the very first thing the government is going to say is "Why should we be paying your baby's bills when the father isn't?" and then you're getting slammed for back child support in the amount of tens of thousands of dollars.
There was a case in the news a couple years ago where this situation occured, and the father was still on the hook, because the contract of this sort was not legally binding.
Sperm donors don't pay child support though. If it's done that way at a hospital he's not on the hook

Seems like everyone has been pretty honest and straight forward about all of their intentions. I fail to believe anything could possibly go wrong, or anyone could even lie. Go see a lawyer. These things are going to vary state from state on whether you can be held responsible or not.
Besides the legal ramifications, think about the fact that you are bringing a child into existence. That you will technically be a father. Have you even checked your genetics to see if you should be having children?
