Another one would be Sultan Beibars, tho Saladin is more famous, I would choose Beibars, he rose from the rank of slave, a Mamluk, to be the Sultan. He was the first to deliver a decisive blow against an invading Mongol horde and stopping an entire Mongol invasion as he personally lead the battle of Ain Jalut, retaking the whole Levant region afterwards.
Stopping an entire Mongol horde invasion is one hell of an achievement, when most other Sultans simply bowed to the Khan and submitted to him.
