Don't know if these were the 'best', but they are memorable to me from playing my first PC games as I'm sure a lot of these games people are posting. This is pretty much the games of Star Wars post since LucasArts' games were my jam back then.

Finding out that you play as Keyan Farlander in that game, the only surviving Y-Wing pilot from the first Death Star attack was mind blowing to me back then

Even more of a surprise to play as an Imperial, Maarek Stele, and seeing Thrawn in an actual game. This video shows the differences in the actual intro of the game between 3 versions.

Star Wars X-Wing Alliance

The last great Star Wars space sim, the intro gives me chills still - awesome action & muisc, great CGI

Dark Forces 1

Finding out who stole the Death Star plans and playing as him

Dark Forces 2

Dark Forces II, seeing live-acting and more expanded universe stuff was awesome when I was younger, LucasArts came through for many that wanted more Star Wars.

Other ones:

Rebellion
Rogue Squadron
Shadows of The Empire
Knights of The Old Republic
Rebel Assault 2

It's been 3 years since the new Era of Star Wars, and there are has not been anything like these with such a wide variety of genre game types.

I'd say MGSV's intro is way up there:

I had a bunch of friends over of varying degrees of MGS fandom when the game launched, and we were all making jokes and having a good time before starting it up, but it went dead silent when the game started and stayed that way for the whole intro besides some shocked reactions or muted "woah..."s. It's just the kind of experience I love about MGS: intense action and high stakes moments wrapped in a vague sense of unknown forces at work.

The first two Mass Effects are both up there with the all-time greats, for different reasons.

2 is probably my favourite, but they're both fantastic.

My thoughts too.
The openings of ME 1 and 2 reflected their strengths. ME2 was really cinematic, and super cool. ME1 really jumped into the world/lore/story at brisk pace.

They're not in my top of favorite games. But FFXIV's "End of an Era" and FFVIII's intro have no equal.

That and every WoW CG.

There's some different sequences depending on your choices, but the actor origin is the one I went with personally.

The thing about this intro is, it is perfect. If you've played the game you will understand. Wadjet Eye is one of the best adventure game developers out there.

Onimusha 3

Whole fight scene blew my mind when I first saw this.

Breath of Fire 4

Love the anime intro feel with the music to top it off

If we're talking more than cutscenes, I love the opening sequences in both Bioshock and MGS5. Two of the best I can recall.
Uncharted 2 is also great.

As awful as the rest of the game is, I've always liked the opening, especially when the main theme kicks in after the dock opens up revealing the title.

Speaking of Xeno games, Xenoblade Chronicles also has an awesome opening with the battle of sword valley. It's so memorable that I can quote the entire thing from memory. Prologue B is also an amazing track.

In 198X whenever this came I remember that getting me hyped as fuck. The whole story was perfect for me at the time and music just got you ready to fight some demons and devil ninjas.

Other than Ninja Gaiden the ones that come to my mind right now are the openings of pretty much all Metal Gear games and Resident Evil 4.

Assuming playable openings count, The Last of Us. My wife hates games and happened to watch me play through that and loved it and wanted to watch more. Really set the tone for the game and got you immersed right away and left you wanting to know what Joel went through between then and the 20 year time jump.

I thought I would add this as I saw Kojima retweet it and it brought back memories.
this opening is like my favourite animated thing from GITS. It harkens back to the manga art style and I had never seen anything like it before.
13 year old me went through a lot of emotions watching this.

EDIT: switched to a better quality video that's in sync

It might be a little bit too far in to really be considered an opening, but in Prey 2017 where you
smash the window and realise you were on the station the whole time
is absolutely brilliant.

For something a little more traditional:
Shadow of the Beast 2
Red Alert 2
SSB Melee

are all top tier choices.
