I live in Toronto, so I'm a few years late to the party on this one, but in recent weeks I've tried this cheesecake and I can't keep away.

The texture is incredible, like you're eating a cloud, super light. Exact opposite of a New York style cheesecake. I like both, but Uncle Tetsu's being so light allows me to scarf down a cake in about 2 minutes flat.

Flavour is all there too. I'm not one for a heavily topped cheesecake either. All those different flavours, blueberry, cherry, no thanks. Just give me the actual cake and I'm good, which is exactly what UT offers. If you get one freshly made it comes out very warm which is nice, but you can also put it in the fridge to cool it and it's even better that way.

Have you tried one of these things? Heavenly.

I've never tried that brand, but Japanese "cotton" cheesecake recipes were really popular a few years ago, and I'm quite fond of them. It's a bit more work having to whip the egg whites, though.

Its pretty freaking good, when they first opened, they had to limit sale of 1 per customer cuz they couldnt keep up.

In Toronto they also have a Japanese style maid cafe, expensive but kind of a unique experience.

I walk by it all the time, when I'm around the eaton center/yongue dundas. I should probably try it, but the line is typically huge.

Nah my dude. Had my first Uncle Tetsu in Cali a couple years back, specifically the Santa Anita Westfield in Arcadia if any of you are close by.

Shit is made out of clouds. Soooooooo good.

I don't think I've ever been more disappointed in a food product than this.

I'm also in Toronto - the lines were huge for Uncle Tetsu's for a long time. I finally bit the bullet and waited the 20-30 min wait. When I tried it, it was the most "that's it?" feeling I've ever had. There's just very little taste to it at all. I'm not against light tasting foods but it was just...nothing.

Haven't tried that particular brand but in general souffle/Japanese cheesecakes are nice. Very different so I wouldn't even compare them to NY style.

They recently opened a store in Montreal, I need to test this out because everytime I tried to get one in Toronto, the line was way too long for me.

I've been to the one at Pacific Mall in Markham. It's good, but like other's mentioned, expensive (if not overpriced).

If you're in New York City, Fay Da Bakery has a "Japanese" cheesecake that looks a lot like the pic in the OP. And it's divine.

I wouldn't call Fay Day's Japanese cheesecake "light." It's way lighter than classic American cheesecakes. The texture is superfine. But it's still a substantial cake. And warning: once you put this cake in your mouth, it will set off all the pleasure centers in your brain.

I've tried making this a few months ago and it didn't turn out great. The recipe I used was kinda weird with the directions. I even showed it to my baking teacher and he'd never seen it before either

I haven't had one from that chain, but most Asian bakeries and stores will have this or something like it.

I've tried my hand at making it, but for some reason I can never get it to not crack. I also have trouble getting it to cook all the way through :\

I'm trying to remember if I ever actually had Japanese cheesecake while in Japan. It's making me hungrier either way.

I miss the Japanese pancakes I had, though.

It gets its texture from a bunch of whipped egg whites. As for not being very sweet, that describes a lot of their cakes (and I prefer it that way).

had like 3 this week lol. Its my birthday and friends know I love that so they got me one on different occasions. Its so fluffy and just melts.
