Wow. The Souls inspiration is clear but I think it is its own thing (it also doesn't seem to be going for that difficulty overall, maybe this is more like a Zelda in that aspect or somewhere inbetween, I'm sure there will be tough sections as well however). Anyway, I love what I've seen of it. The more the video goes on the better it looks with cooler locations and encounters too. And that low-fi art style is awesome. I don't even notice it's low-fi when just wandering around, only when focused on elements like faces/hands. Locations still look awe inspiring when they're meant to be and combat looks great too. No?
