I've noticed myself becoming close to or overweight a few times in my life and as soon as I recognize it I take a hard swerve to stop it and lose weight. Why in the world wouldn't anyone take drastic measures as soon as they notice they're becoming close to overweigh?

I was super skinny my whole life until I could afford to eat lunches and had breakfast every day... I didn't notice until someone told me I was fat.

I felt gross because they reacted as such so I went in a diet... And the thinner I got the more support I got.

Because people no longer eat food as their bodies were evolved to eat. They eat creations from chemists. Just look at the labels of ingredients on anything you eat.

In nature you just have fruits, vegetables, nuts, and meats. And you have to walk or run everywhere. And you don't have machines to do all your manual labor. The way our bodies evolved, its actually challenging to get fat. Fat people would have been an extreme anomaly.

But now no one has to move. No one has to do manual labor. And all they eat is freak creations from corporations with an ungodly amount of calories. People didn't even really know sugar was a thing until a couple hundred years ago.

Back in the 1950's, a KID'S SIZE french fries and a TINY hamburger the size of a modern-day slider, and a 7 oz glass of Coke (size of a modern shot glass) were the ONLY sizes available. People had ONE of each and that was their entire dinner.

Food is good, exercising takes time and effort, easy food options are often terrible for you, people work behind desks, and portion control does not exist if you don't make your own food.

I use to be like you OP, than I hit my mid 30's be suddenly that hard swerve didn't work as well. Suddenly losing 15lbs in a month just by cutting sugar no longer worked. As you age your bodies efficiency cuts down dramatically and it gets harder and harder for the same old tricks to work as well
 
In addition to the fact that the modern world is designed to betray human biology, not everyone lives in the circumstances to instantly change their diet the moment they're five pounds heavier than they want to be.

A ton of people are being killed by stress, overwork, insane commutes, and constant depression brought on by all of the above. It can be hard to put health first at all times.

Don't forget there are entire industries that contribute to this state of affairs and profit off encouraging people to eat poorly then selling them cures that don't work.

Modern scientists have figured out the chemicals which our bodies find hard to resist, and surround our lives with targeted and constant advertising for said substance.

The real trick is how convenient and relatively cheap it is to get, which allows these substances to be consumed in portion sizes way out of the range our bodies naturally handle.

This is further facilitated by modern life pushing many people into a cycle of sedentary living. It all adds up.

shitty food lacking in nutrition is super cheap, readily available. we're conditioned at least a little to believe we dont have time or money to spend on shopping and eating healthy (which is somewhat true). and sometimes you really do miss that interstitial stage between "putting on a few pounds" and "holy fuck i cant fit into my jeans anymore". it happens.

as for why people dont try to curb it or reverse it when it gets too far along, well... because its fuckin hard. i lost over 100+lbs in my early 20s and to this day i can legitimately not remember getting from point A to point B, and the few times ive yo-yo'd back to a heavier weight and slimmed back down have been a pain in the ass.

also, honestly, some people probably just dont give a shit whether they're bigger or not.

Sure I guess. I'd rather have an arm amputated than be fat so I guess we have different perspectives.

We as a species have a biological homeostasis that balances rewarding factors with eating, and a feedback mechanism of body fat stored to control appetite. That balance is highly selected from hundreds of millenia of natural foods and basic cooking. Modern junk food has so much reward, it breaks the balance. Ask any obese person and they'll confirm they are constantly hungry.

Injury was the biggest way I gained weight as of recently. Some bad experiences, combined with throwing out my shoulder and dropping a knife into my foot made it hard to exercise. I turned to alcohol to help. I gained weight.

I honestly don't think it's that hard. I think most people lack discipline. Simply don't buy unhealthy foods at the grocery store and don't go out to eat. Make going to the gym a daily routine or do workout videos at home. There really isn't much of an excuse if you ask me. I still eat unhealthy food every week but 95 percent of what I eat is considered healthy so that 5 percent barely affects me.

There's lots of factors for becoming overweight, but it's manageable once you focus. I now have time and resources to lose weight. I used to work a four day, ten hour shift. I never wanted to work out on my day off since I just wanted to be lazy. Also, it didn't help that I'd be downing lots of mostly vodka and some Diet Pepsi in a pint glass every night on top of shitty eating habits. Gained a lot of weight. Quit that job and now at my new one, there's access to a free gym. I never miss a day during the week. Basic stuff, cardio machines some free weights but I keep at it and am way more mindful about what I eat and I'm starting to see results.

I'm trying, man it's hard. ~8 pounds down the last month, ~30 pounds down the last 6 years.

Really though, I was speaking to the question of "why are people big?", not "why are you big?".

I think what keeps Japan thin is how plain your food is. It is focused on absolute freshness and has few spices and condiments. Also from what I understand you all frown upon eating while walking, where as us Americans stuff our faces on the go.

The portion sizes are an effect, not a cause. The hyper palatable food causes increased demand of larger portions. Take for example the fast food burger. In the 1950s it was basic. Today there is MSG, bbq sauce, bacon, avocado, etc all increasing the palatability.

I'm not Japanese! I just live here :P

While you are right, Japanese people also love Chinese and Korean food which are anything but plain (and those countries remain slim too anyway). Ramen is huge here and that's usually pretty high-calorie!

It seems a lot when taking into account the fact the average height is 5'10" in the US. I'd be tiny (in terms of weight) in comparison to the average American and I'm not even skinny where I come from :/

What you've just described is a fucking trip because it is tremendously hard. Drastic lifestyle changes are hard to make, and fucking herculean efforts to maintain. That you not only don't understand this, but think it's the opposite, is sort of mindblowing.
