Hi ERA

What's your go-to meal that takes 20 minutes or less to make and is cheap/tastes good?

Would like more than just noodles/frozen meals haha.

Chilli.

Fry off some mince while chopping onion, mushroom, pepper. Throw the veggies into the pan with some chopped tomatoes, kidney beams, tomato puree and chilli powder. While they're frying boil some rice.

Takes me no more than 15 minutes if I time everything perfectly.

grab random vegetables, throw them in a pan, fry it with some chili/ginger/lemon grass, while boiling pasta. Quick, healthy, yummy. Doesn't matter what vegetables are involved, tastes nice all the same. The thing that takes the longest is cleaning the veggies.

Wrap "Pizzas." They're a good way to use up any left over veg or meat you have in your fridge too.

Make a quick tomato sauce (just dump a tin of tomatoes into a pot, heat it up with some mixed herbs and garlic in it)
Put a tortilla wrap on an oven tray, put some sauce on it, dump whatever toppings you want on it (it's a fuckin' pizza, anything will work but you know...cheese is essential) and chuck it in the oven for 5 minutes.

Chilli and Bolognese are also great options as have been mentioned a few times already.

rice cooker for a bowl of rice, can make for several days in advance

then just stir fry basically anything. get pork mince. get thin beef slices. chop some vegetables up small. as long as you have oil and onions you're set

Make a bunch of taco chicken meat then incorporate it into several meals through the week (tacos, quesadillas, etc.)

Make little pizza things on tortillas on a cookie sheet. You can skip the sauce cause it gets soggy. Use chopped up cherry tomatoes if you really need it, but cheese/sausage/olive oil is good

Spinach Scrambled Eggs is the easiest thing I make regularly, and I really like it. There is not much that can go wrong, once you dont overcook. 1. Spinach in pan. Cook. 2 eggs on top of cooked spinach. Cook some more. Stir a bit, 3. Season. Done.

It's nice.

Veggie dhal is easy and like 30 mins, extremely nutritious too and costs bigger all.

Soak red lentils (or don't), chuck them in pot with water and some basic spices like ginger turmeric and curry leaves etc, chop veggies up while bring to boil and add them as you go, cook for 20 mins on low heat with lid on and when it's nearly done you heat up some oil in a tiny pot/pan and chuck in some more flavorful spices like black mustard seeds and Chana masala mixes from local Indian shop, add to dhal with salt and some cayenne.

Believe me it's super easy once you've done it even one time and requires zero attention throughout the majority of the cooking time, only at the very start and very end, can make big batches too for later chow if you want cos it keeps well.

My other ultra lazy meal is to just chuck 1/3 cup rice in a pot with frozen peas (15 min cook time zero effort) and at the end I dump it in a bowl with butter soy sauce and some tinned 4 bean mix, maybe sliced tomato and avocado if I have them. The ultra CBf poverty meal that requires about 100 seconds of actual work to make.

Fried mackerel with rice and other veggies, curry, and bibimbap are my favorite go-to dinners when I'm not creative enough

Couple quick dinners I often do:

Roast some aubergine n tomatoes n garlic for about 20 minutes then put on pasta with some basil

Peppers, courgette, aubergine and tomatoes in a roasting tray with some good sausages and olive oil, roast that till sausages are cooked.

Fry some garlic and chilli (till garlic is kinda golden looking) then mix in some cooked pasta and grate some Parmesan or some other kind of hard Italian cheese over it all on a low heat so it melts, add loads of ground black pepper.

Tomato and chorizo together is ace, I used to have it with giant cous cous (not as fancy or as hard to find as it sounds). Fry diced chorizo till it's browning on the corners then add some chopped fresh tomatoes and garlic, cook for like 20 minutes or until it goes a real tasty looking dark red and caramelises round the edges of the pan, then add cooked giant cous cous (or a small pasta like orzo or the tiny little shells). So good!

Its very cheap, gets you at least two servings, super easy to make. Also doesn't make you look like useless scum the way pot noodles do

Put pasta on to boil. While it's boiling sautee garlic and one or two anchovies in olive oil, add a tin of crushed tomatoes or passata whatever you prefer. To this add a tin of tuna, a teaspoon of sugar and a pinch of oregano, then salt and pepper to taste. When the pasta is cooked stir it through the sauce and serve with chopped parsley or grated parmesan.

That's the basics, you can add olives or grilled red pepper strips or grated carrot if you need more vegetable. Can be done in 20 minutes and bonus is my kids love it.

Pack of microwaveable (brown) rice, mixed with can of flavored tuna (or other canned fish).

Usually I'll dump some diced frozen veges into the steaming hot rice first so they thaw into the heat.

If the fish isn't flavored, I usually make a makeshift Asian dressing by mixing in soy and sweet chilli sauce.

Stir Fry. Heat oil in frying pan/wok, add some spices or one of those ready made stir fry sachets, throw in meat, then once the meat is partially cooked put in veg (the lateness of the veg depends on how crunchy you want it to be), whilst that is cooking cook some noodles in some simmering water, once the noodles are cooked throw them into the pan for a couple of minutes.

Done. Enjoy.

For recipes, both of these here can be done in 10-20mins.

Salmon on rice: Rice, salmon, salt, pepper
Optional - Lemon to squeeze over salmon, mushrooms/spinach/garlic/spring onions to mix into the rice

Cook rice (rice cooker awesome if you have one)(short-medium grain recommended)
Olive oil into a hot pan w/ a knob of butter, season salmon (salt, pepper, etc) and drop into pan
Cook until desired doneness
Drop on rice
Profit

For optional stuff:
Chop mushrooms then drop into pan with melted butter
Cook for ~5 mins until some of the liquid is released
Add chopped garlic, cook for 1 min
Add ~tbl spoon soy sauce, cook for a few mins
Mix into rice
Profit

I use skin on fillets because skin is heavenly, but for savings, Walmart sells 2lb bags of salmon fillets for mad cheap. Recommend using lemon on those to bump it up a bit.


Marinated steak salad:

Cheapest cut of meat you can find (I used rump)
Drop steak into ziplock w/ the juice of 2 limes, chili flakes, and a few crushed garlic cloves
Let it marinate for at least 20mins
Prep salad bits (lettuce, tomatoes, and crumbly feta works nicely)(a little bit of olive oil also works as a dressing and doesn't clash with the marinade)
Take meat out, salt and pepper both sides and cook to desired doneness
Let rest a few mins
Slice and drop over salad bits
Profit

You can add whatever you want to the salad bits and switch up the marinade easily.

Have you considered making a larger batch of sauces that take longer and putting portions in the fridge/freezer for later use? It'd average out at 20 minutes as you just need to make some rice/noodles to have with it and some sauces just need the extra time.

My contribution - from one of the Leon cookbooks which are thoroughly recommended. Put some pasta on, then while that cooks chuck a tin of anchovies with the oil they come in into a separate frying pan with chopped garlic and chilli (flakes are fine), fry off until the anchovies dissolve then add fresh lemon juice (juice half a lemon but save some) and a knob of butter if you want a little more sauce. When pasta is half cooked add some green veg (shredded cabbage goes really well, or just some frozen peas). When pasta is done, drain and combine the two and then drizzle with saved lemon juice and add grated parmesan cheese.

Sometimes I just whip up meat and vegetables. One frying pan. Some butter or oil. Season the meat and vegetables, throw them in the pain. Super easy, it basically cooks itself while I'm doing other stuff. All protein too; it's good for you.

Easy peasy lemon squeezy tagliatelle.

Boil water and tagliatelle.
Cut broccoli and boil
then take a big bowl and add:
Smoked salmon cut into pieces
Half a cup of creme fraiche
Squeeze out a lemon
A bunch of cut up parsley
Top with some black pepper

Strain the tagliatelle and broccoli, let cool a bit and mix in.

20 Minutes and nutritious. Great for a summer day.

Skirt steak, make a guacamole, and a pico de gallo salsa, and bam. Instant tacos. Slice some lemon and cilantro, or parsley of you are a genetic inferior.

Thank you! I was horrified at the suggestion that it was a quick dish lol.

Pasta with butter and sage on the other hand is the definition of quick and easy.

You could also do the same with rice.

Also depending on your cutting speed you could make stir fries incredibly quickly.

if you're feeling super super lazy honestly nothing wrong with frozen veggies and steaming them quickly. Otherwise you can blanch brocolli or carrots or something super fast and easily as well

Steak in an airfryer. Buy a steak for <$8, cover it in seasoning, throw it in for ten at 400 degrees. Flip it again for another ten.

It's not going to be the best steak you'll ever have, but I've never been able to pay less than $15 for a steak that's surpassed it. Doesn't require you to do much cleaning, doesn't require you to carefully cook the steak. You just throw it in, flip it once, take it out. Comes out at a solid medium, which is fine. You're not spending the time or money on this to deserve some perfect medium rare steak.

A lot of pastas and curries are < 20m meal; just look for some that appeal to you.

Also, look into "quick 1 pan meals", there are tons of easy combinations.
