I thought it was well known the meat is what gave the casing flavors, and you'd just eat that. kind of how you'd enjoy a banana.

I love banana peels and sausage casing. Sometimes I put the banana inside the sausage casing and enjoy a good banana sausage.
I was confused at first because it can be interpreted as only eating the skin.
That's what I thought it was about and was like what the fuck. What is this about?

Yeah, the hull from sausages is often made out of intestines. But frankly, a lot of ingredients of sausages stem from the same area, incl. the rectum. It is known.
I think that's what it is about. Then OP says the actual meat part is just for flavoring.
