It's not my all-time favourite, but Priscilla's song from The Witcher 3 was cool--I love, like, actual in-game musical performances from characters.
I think my top pick would probably be the Persona 4 soundtrack, just generally? I love that game's music.
Oh, and of course, you can't forget about BURNING RANGERS!

JAM Project, one of the most well-known if not the most well-known anime and video game music group for a reason. Their many Super Robot Wars openings are adored even by people that don't play SRW, and these are my favourite 2:

Metal Gear Rising's already been mentioned, so Imma slam this one in here instead. The imagery and turnings-of-phrase are incredible. It perfectly encapsulates the tone of the game as well. You know exactly the kind of adventure you're in for just from the theme song.
many hours on repeat, loved this track since it was first revealed.
