Tried to google this but didnt find any good answers lol. So I forgot to read the packaging and apparently they expired 3 days ago. I boiled them I dont know if that helps? What kind of trouble am I in lol.

No. They last about 3-5 weeks in the pantry and 3-4 months in the refrigerator. Unless they're all wrinkly and moldy, it's totally fine to eat them.

expiration dates for things that are not milk are pretty iffy. potatoes aren't really known for spoiling by just being out, thought they can go bad if introduced to mold, bacteria, or spoil with age. but 3 days isn't long enough.

Some supermarkets in the UK have stopped putting expiration dates on veg because it's basically nonsense.

If it looks ok it's ok. It will look and taste awful before it's actually bad for you.

You should be fine as long as they didn't taste really bad as well. Potatoes are very resilient, any food poisoning you could get from them would have to come from outside - like contamination from other food like chicken, or by infestations like mould. Potatoes kept by themselves which look fine and taste fine are pretty much guaranteed to be fine.

It's called "best before date", or minimum date, that doesn't mean it's rotten one day later, the same with every other grocery, it's not a maximum date.

So no, you will be absolutely fine.

Yep, I've eaten carrots that a week past their use by date and theres nothing wrong with them. Food is pretty good at telling you something is up with it, it's either visible (mould, discolouring), tactile (like when onion and potatoes are soft) or you'll smell it.
