As far as games that have a release date go, most anticipated for me is probably Ratchet & Clank: Rift Apart. Always been a huge fan of the series so I'm stoked for a true sequel that takes advantage of the new hardware.
Now, if Horizon Forbidden West makes it out in 2021 then that'd be my #1.
That was never promised for this year and I really doubt it's coming out this year. Even in the Direct they said we would "get more info this year". That doesn't mean a game release.
New Game Plus Expo was a bit of a disappointment for me so I'm still hoping for Crossbell and Hajimari to make it over.
Otherwise, SaGa Frontier Remastered.
There's Tales of Arise and SMT5 too but doubt those are coming out this year.
Of the games that have concrete release dates, it would have to be Nier Replicant. I never did play the original game, so I've been waiting for this for a long time. One more month, baby! I'm pumped just thinking about it. I'm going in as soon as my copy gets to me.
Probably Nier Replicant atm. I'm looking forward to seeing a lot of PS5 games but I dont plan on buying one just yet, and nothing really exciting has been announced/confirmed for Switch other than BDII (which I am loving).
Edit: ugh how could I forget NEO TWEWY, I am really hyped for it as well.
Monster Hunter Rise! Hyped for Ratchet & Clank too, + Horizon 2 and Shin Megami Tensei V but the latter two could easily slip into 2022 considering we haven't heard anything on them in a long, long time. We'll see.

Halo Infinite, Horizon 2, and Age of Empires 4 - IF they all make 2021.
I continue to have a good feeling about Halo Infinite, and think people sleep on that game at their own peril. I detect a quiet confidence from the studio in what they are making, and everything they've described about the game sounds like my ideal Halo title.
