I never had a PS1.
For PS2 I bought the slim using my birthday money one year and my first game was definitely one of the 9000+ Dragon Ball Z games but I can't remember which one. Probably one of the Budokai Tenkaichi games.

PS1 - Can't say for sure I was probably too young to remember. I'll just say Crash Bandicoot 3 Warped and Mortal Kombat Trilogy as those are what I remember the most.

PS1 - a demo disk kiosk at Blockbuster video, I remember it had an Air Combat video, but I first played WipEout. That blew me away!
PS2 - Tekken Tag Tournament on a demo kiosk pre release. Sold me on the system.
PS3 - good question, I'm not sure. Maybe Resistance?
PS4 - not sure again. I think it was Killzone Shadowfall

PS1: Ridge Racer. The Playstation wasn't even on my radar at the time when I played it at my cousin's house, and honestly I'm kind of surprised we got it; up until then my parents were pretty firm about never getting a home console of any sort. I just remember it being really impressive, so maybe it made an impression on my dad as well!
PS2: Gran Turismo 3 A-Spec. Bought this when I graduated from university, it'd been years since I permanently damaged the spindle motor of my PS1 leaving Gran Turismo 2 on for a solid week before we could buy a memory card on Boxing Day. Getting a PS2 for Gran Turismo was obvious in hindsight.
PS3: Ratchet & Clank: Tools of Destruction. I really got the PS3 because of Wipeout HD, which wouldn't come out for another two years I think? This was the holiday sale bundle available at the time, and it looked cool enough as a game so I figured I could get over my irrational fear of anything that looked like a platformer. Turns out I like Ratchet & Clank waaaaaay more than I like Mario.
PS4: Killzone: Shadow Fall. I mean, I guess it's not a terrible game, but I wouldn't exactly call it great either.
Vita: Uncharted: Golden Abyss. Honestly? I think it's a pretty good Uncharted game, though marred by some truly awful minigames (if I never have to point the Vita camera at a light to do a puzzle thing again, it'll be too soon).

PS4: Strider I believe? It was the only time I bought the console without any games so I just downloaded that month's free PS+ game.
Also there were no Mortal Kombat games out for PS4 yet at the time.

PS1: Honestly don't remember...I think it might have been FF8, certainly my strongest early PS1 memory. Yes, not that early, but I got most of my consoles late as a kid up until PS3. And yeah, I played FF8 before 7 which is probably why I have a different opinion of both games than most people (love them both though).
PS2: Final Fantasy X. Playstations were over 60% my Squaresoft/RPG machines at the time. I really, really felt the difference in FFX and missed the world map (still do, and still don't think FF's ever been quite as good since), but it's a fantastic game and I loved it to bits. Shame most of the side quests are oddly bad especially after FF7-9 were such a treat. Actually it might have been Onimusha, again, don't have perfect memory here. I think I got them both.
PS3: Resistance. No surprise as it was the 1 good launch game and I did get it at launch. I actually did really, really enjoy the game and the series, no memes here.
PS4: Resogun. I also had Killzone Shadowfall but was most excited for Resogun, it's great. Got the plat (but not all the DLC trophies).
