For me it's Jumanji: Welcome to the Jungle. I thought "ugh a movie that certainly didn't need a sequel," but damn I really enjoyed it. The cast is fantastic and hilarious (Jack Black, in particular, had some fantastic scenes, like teaching Martha how to flirt), and I'm happy that the story only tangentially refers to the original, as it stands on its own rather well.

Dora and the Lost City of Gold. I was too old for the original Dora show when it aired and I'm definitely too old to be watching it now but it's actually pretty clever and a lot of fun.

The boss baby. Went in thinking it was going to be total garbage. Turns out it's a well animated movie with a pretty touching story.

I had the same answer as you OP, what a surprise that movie was.

The whole Fast and Furious series I wrote off as car porn. And it is car porn. But there's a legitimately entertaining and compelling story/characters surrounding the car porn.

Pacific Rim. The trailers made it look like one of the worst movies ever.
Have to agree with Sonic The Hedgehog. That franchise has been a dumpster fire for ages and video game movies in general are usually not so good. It was somehow watchable, though.

Lord & Miller have a two-fer with the Lego Movie and Into the Spider-Verse. I did not expect the latter to be the best Spider-Man movie period.

I hated the book, it is unreadable but watched the movie for some spectacle on my new 4K TV.

Was super impressed how much better the movie was - genuinely a blast to watch.

Alita Battle Angel. Instantly became one of my favorites. I recognize the faults, but everything else was so good in my eyes that the faults don't affect it that much.

I though Game Night was going to be decent enough but it turned out to be one of my favourite cinema comedies of the last decade.

John Wick was also way better than it's reasonably low budget thriller status would have you believe. So pleasanlty surprised by that.

Taken, I never would have expected Liam Neeson to make a film like that. It's brilliant. It's just a pity that the sequels are so dire and that non of Neeson's follow up action films have been that good (to me at least).

Yeah I had zero expectations of Game Night being good and then laughed my ass off the whole time. Jesse Plemons stole the show though.

on a side note, Tag was stupid but pretty fun

The boyfriend and I saw this in theaters with some friends. It was WAY better than it had any right to be!

The Assassination of Jesse James by the Coward Robert Ford. I expected a pretty decent history flick when I watched it a few months ago, but holy shit I wasn't expecting this. What an amazing film. The gorgeous cinematography. Some of the best acting by Pit and Afflek. The music..... it's just an amazing movie that exceeded every expectation I had.

I thought Clue would just be a goofy film adaptation of the board game. It ended up being one of the absolute funniest things I've ever seen.

I thought John Wick was going to be a shitty B action movie, kinda like one of those movies an actor does when they haven't had a part in a while.

Instead it turned out to be absolutely amazing and I hope they never stop.

Valerian and the City of a Thousand Planets.

Slept on it for a long time but when I finally saw it I was impressed by how much fun it was. I liked it at least as much if not more than Star Wars TFA, and definitely more than TLJ and ROS.
Really impressed by the visual effects too, there's some impressive looking stuff in that movie.
Main characters were kinda duds, but they didn't ruin it (probably why the movie bombed). Probably should have swapped at least the dude with a bigger name actor.
