I had a view of what it could be a FF Souls, but this is definitely not that.

Only if you play it like a Souls game ignoring mechanics like flux.And Origin certainly didn't look like Bayonetta either way.

Even still I'm pretty sure the first Nioh looked better graphically and in terms of style

Always with SE games, their translation team likes taking huge liberties to change the translation and ramp up the edge in places where its not needed.
Why would you wear this designer shirt and a pair of pants to a boss fight? Especially a boss wearing a full set of fucking armor?

My biggest problem (other than the wretched VA and the dialogue they were spewing) was every character is designed so incongruously with the others. ALL of the 3 main characters look like they come from 3 very different games.
I have to wonder, is this intentional? Since the original FF had time travel shenanigans, maybe the 3 main guys come from 3 different timelines/eras... cause otherwise, hooo boy.
