Yeah the aesthetic is strange. Not being able to read anything, I honestly have a hard time telling if this game is completely pre-apocalypse or not. With the way some of the characters are dressed (the dude with the funny goggles or the girl with the mouse ears hair), it's hard to tell.Wow this game looks... all over the place. The aesthetic feels SMT, and yet... I don't know. Like it's a mishmash? The OST is on point, at least.
Looking more into the dungeon, it seems it's open at certain times you can go in? There's bosses in there and it seems to be some kind of raid? I went in there once and ran into Zouchouten he was wrecking my shit pretty hard first turn, then I got a "group attack" or something and it showed a bunch of players and then he took like 99,999 damage and died instantly. I feel like that was just showing the concept and not representative of usual boss difficulty.

I thought I had steeled myself for the difficulty of a modern Shin Megami Tensei game after making it well into the (archaic) Digital Devil Story: Megami Tensei remake on SFC, but Minotaur stomped me hard and I lost interest quickly after a few attempts. I read that it was a pretty difficult fight even for seasoned players, so I'm hoping that was maybe a one-off and not repeated in Apocalypse.
I think Apocalypse's War difficulty hits the sweet spot in difficulty, especially when some of the situations of multiple boss fights in a row with no break in between. And if you think it's too easy (IMO it is), hard mode is quite great and never unfair, so there's that too.

I thought the difficulty in Apocalypse was fine - at the point where regular encounters start to become trivial for the area you're in you'll generally come to a boss fight that keeps you more on your toes.
I ran with a magic build and the boss fights with...

... tended to set the pace nicely in terms of challenge/shift in gear.
It's more even than IV.

I'm trying to fuse a Lailah, seeing the combos available, I want to use Principality + Byakko here, but the button is grey and it won't let me for some reason:

I had both Byakko and Hathor in my party, but I ended up going for another combination to get Lailah. I'm not sure what it was, or why they would even show the combination as possible if they were races that you couldn't fuse.Likely that one of the characters you want to use for fusing is part of your dueling team. I ran into that same issue.
If it's not that be sure that the demons you want to use aren't conflicting types.

That is true, I forgot Jack and Ryan actually have portraits in this one, and they look pretty good actually.They also added portraits to characters that were just sprites originally. It's not only Alex (she's the only one actually credited to an artist though, while the redesigns and minor characters are just from the "Atlus Design Team").
I'd say there's less focus on making demons look uniform, which is why they weren't an issue.

8 floors up and 8 floors down is a pretty huge dungeon, or at least it sounds like it. Kind of hope there are some terminals along the way :P.
