Honestly it's moods. I'm mostly a first person driver but sometimes for seriousness I go third person, and occasionally that zooooomed out option.

Sometimes I want to see the inside of the car. Sometimes I want to see the car.

Outside If I need to be more careful. No car if I want to feel like flying.

People voting "No car" are complete psychopaths.
It's either "behind" or "a bit further". Cockpit is cool too but less.

Hood mostly in sim style racers (occasionally 1st person) and a combo of hood/behind the car for arcade style racers.

As a kid, I perferred third person. Nowadays, I use first person when I can.

Usually behind, but hood cam is my racing equivalent of the gamer lean.

Depends heavily on the game, but in general the camera close to the car behind is my choice. Driveclub's default is perfect imo:

Hood if sim
Behind the car if arcade racer (e.g. Daytona USA, Wangan)

Used to be no car when I play racing games as a kid, but over time i realized that view is so bad, because the camera is so close to the ground, its very hard to see the incoming terrain / path.
