Pixar has dabbled with it (like the tech demo I posted above), and Disney with experimented with different styles with Paperman and Feast.
The Red Turtle is mostly hand drawn by the way, aside from the turtle itself.

Meanwhile in reality, Pixar is in fact, well loved.Pixar always reveals their movies with a title card, a piece of art that looks more interesting than the actual movie, and a vague one sentence premise and then people assume and speculate what the movie is about and are usually wrong or disappointed.
I am not saying they aren't. The wild speculation based on nothing is amusing. All we know is some kid has a summer adventure in Italy. This could be anything.
It would certainly be great to see them experiment more.It's a shame Disney/Pixar still hasn't take those technology beyond shorts. I think they experimented a lot with Tangled but had to give up in the end, being too expensive? I can see Soul doing some interesting things in segments, perhaps borrowing a bit from the Rhapsody in Blue part of Fantasia 2000.
We don't know which boy is Luca but I'm pretty sure the smaller one is the Sea monster. In the Disney+ series inside Pixar, some concept art for Luca is shown and we see the Sea monster
