A good antibiotic/hormone/chemical-free, vegetarian fed, pasture-raised, young bird no more than 3-4 lbs exhibits a wonderful succulence, tenderness, and rich flavor, far outclassing the typical supermarket specimen which serves as most people's reference for how chicken is "supposed" to taste. (To take the flavor possibilities to an even higher level, try genuine heritage chicken.)Anyone who thinks chicken is better needs to grab some prime beef at Costco.
