This is not Dark Souls, it's Elden Ring. The game is balanced around characters having more tools at their disposal,switching Ashes or Summons depending on the encounter.
It's usually a bell attached to a wire that alerts enemies in the area, or maybe you're hearing the chimes from this beetles that give you flask refills or ashes of war

I'm confused by this. They give you these tools at your disposal because it's part of the core gameplay loop. You beat the boss fair and square if you don't use cheats or glitches. Using in game items and summons don't mean you are fighting unfairly.Because I've beaten almost every Souls game only using the starting gear and no summons, never had troubles this has been the first game of theirs I've struggled,it's a self imposed condition because if I summon I don't consider I beat the fight fair and square
