Most chop suey I've had is pretty viscous like a soup, poured over rice obviously. Sometimes when I make it and have leftovers, it thickens up enough that I could see throwing it on a tossted bun

It's definitely a thing but I'm not into it. Chop suey is too wet to go on bread and I'd rather just eat it separately. A roast beef sandwich is a much better local specialty.
