Both are sexy but I feel like there is more versatility in chicken dishes.

You have basic ground beef stuff--burgers, meatloaves, meat pies of various cultures.
Then you have steaks of various types.
Then you have braised preparations like short ribs and oxtails.
Then you have BBQ--brisket, ribs, etc.
And finally charcuterie like pastrami and roast beef.
Offal is good. Tongue, beef heart, liver. But I know most people aren't into it. Beef tongue tacos are great, though.
