I'm cheating.

I'm using a 100% Holodeck crew that can be instantly swapped in and out for whatever situation arises.

I'll let the Holodeck AI figure it all out. I just want to kick back in the Captain's chair.

I was always going to go with the Defiant, it is one of my favourite Trek ships so I had to pick a crew to fit the ship. Think my crew would do a good job in the sneaky Defiant, not the most powerful ship but cloak more than makes up for it so you need a crew who can think outside the box but still do the job if they get in a scrap.

Never forget that Obrien is absolutely ridiculous with the shit he can do with a teleporter. Him and la forge together on the same ship originally was just so much overwhelming capacities of adaptive engineering. Throwing in Data on top of all that really states just what kind of crew Picard was after. The man was a hungry explorer with a thirst for archeology and the unknown. He built his crew strongly for analysis and measured thoughtful response.

Love that dynamic.

Captain: Picard Janeway (if we're being honest, they're diplomatically similar, if not the same, they both care immensely about their crew and Star Fleet, but Janeway is a little bit better at engineering and is better in hand-to-hand if it comes down to it. She has a little of the edge of aggression Kirk has but not all of it)
First Officer: Riker (would have been Spock, but I think Riker would actually pair well with Janeway for a bit of counterbalance)
CMO: torn between kelvin McCoy and The Doctor. If The latter doesn't have his holo-emitter limitations and cannot corrupt himself again, he wins.
Engineer: torn between Torres and Tucker. I think Tucker is the better engineer overall, but Torres works really well with Janeway
Aux Staff: Paris, Data, Seven, Wesley and Hoshi (this was, honestly, the easiest of the categories)
WILD CARD: Q. He'll make things fun, is more of a god than any Doctor and John de Lancie is a super nice dude IRL.
Ship: Enterprise E. I actually would have gone with Voyager for its advancements, but the E has most, if not all, of them and has more wiggle room.

If this seems Voyager heavy that is by intent, because of the ones mentioned they're all really great at their jobs. Nobody from Discovery is on there at all because I haven't seen it.

Side note: Kind of thinking maybe with most/all of the security officers being in the Aux crew, maybe take a choice away from Aux and have a choice of one Security officer, as well.

Picard (Sisko was considered as well)
Spock - TOS (Riker and Worf were also considered)
Bashir (McCoy, Crusher, and The Doctor were considered)
O'Brien
Sulu, Data, Troi, Odo, Jadzia
Yoda
Defiant

Picard is good at everything. Diplomacy, peace/exploration, battles.
Spock is the most intelligent and capable of the first officers.
Lots of good doctors to choose from. I wanted to pair Bashir and O'Brien as they work well together (although the same can obviously be said for Spock and McCoy).
O'Brien is great although La Forge and Scotty are both great as well.
Sulu, Data, Troi, Odo and Jadzia each have a lot of skills and benefits they can bring to the group.
Yoda is the most powerful although obviously Charlie is the best Wildcard choice.
The Defiant is good in a scrap and gives Picard a lot of flexibility in what to do in various situations.

Team sleep with all the aliens.

Captain: Kirk(TOS).

Number One: Riker.

Doctor: The Doctor (Voyager). He's probbaly the least embarrassed about dealing with the astronomical number of horrible STD's the crew is destined to develop.

Chief Engineer: Tucker.

Auxillary staff: Data, Troi, Quark, Rom and Nog.

Wild Card: Rimmer.

Ship: USS Vengeance is the biggest one. This is critical.

Kirk (TOS)
Spock (TOS)
McCoy (TOS)
Scotty (TOS)
Data (TNG)
Odo (DS9)
Garak (DS9)
Jadzia (DS9)
Seven (VOY)
9th Doctor (DW)
USS Enterprise E (FC)

only tough decision was McCoy vs Bashir vs The Doctor.

Janeway and Georgiou don't give a fuck and travel across the multiverse with their super smart science crew. Torres already kept the ship running without starfleet support, Troi will figure out who to trust in their ever changing realities and Phlox can cure everything including assimilation with slugs and shit. Baby Yoda is cute and a badass.

I'm insulted there's no Chief Science Officer position for an organization dedicated to exploration.

I think I would go with Sisko as Captain and Riker as first officer. Sisko can be head strong and impulsive, Riker is like that as well and I think they could play off each other well. For Chief Medical Officer, I think Bashir or the Doctor are kind of cheating as they are both kind of rigged. Chief Engineer has to be O'Brien, no one got shit done like him.

Auxiliary staff is much harder I feel. Garak is a must as he is pretty much super spy. Data and Seven you could maybe toss a coin on if you don't want to take both of them. I will say that Voyager Seven seemed much more capable than Picard Seven where Picard Seven was pretty much only action hero.

There's so few in the shows

Spock is considered chief science officer but takes up the first officer role
TNG doesn't have one, Data fills the role at times but is considered Operations Officer and second in command
DS9 has Dax
VOY doesn't have one until Seven who is never official in that rule and isn't in any form of command position
Enterprise has T-Pol until she is promoted out of that position
Discovery doesn't have one but Stamets is the best suited to the role we have seen.

I'm building this crew for maximum space moral dilemmas, chuck em into the nearest black hole populated by omnipotent space aliens having arguments over war or whatever and they'll get shit done or blow everything up trying

Captain: Picard
FO: Burnham (she's just spicier Spock)
CMO: Mccoy, Kalvin
CE: Scotty, TOS
AS: Data, Seven, Georgiou, Ezri, Sulu (Kalvin)
Wildcard: 9th Doctor posing as a Redshirt (he's just spicier Q)
Ship: Enterprise A, Kalvin

The way I look at it, is people should be listed in multiple categories if they have multiple positions or skills.

So as you point out Spock and Dax definitely should be there (As well as Data).

Same for Conn/Pilot. Or security and tactical.

Edit: Just noticed you made this personally. I'm not shitting on your idea. Its fun and you put some great work into it. Thanks

Leaning heavy into TNG and DS9.

Captain:
Picard - GOAT despite everything else.

First Officer:
Kira - Moral clarity would jive well with Picard. Beats Spock by a smidge; got Data and Odo so the outsider quota is filled.

Chief Medical Officer:
Bashir - Later seasons battle-doctor version. Beats The Doc by a smidge.

Chief Engineer:
O'Brien - Like a more everyman version of Scotty. I like that quality. Plus I picked Bashir, and so must consider bromance.

Auxiliary Staff:
Data - No brainer.
Worf (TNG) - The cool later season version, not the one that gets his ass kicked all the time version.
Garak - How can you not? I better see him on every list here.
Odo - Shapeshifting is still super underrated in the Trek universe. Plus I like my gruff.
Quark - To keep grounded and keep from being high and mighty. Plus Odo synergies.

Wildcard:
How can it not be Q if I pick Picard?

Ship:
1701-D - Those curves. Travel in luxury, 80's style, baby!

Captain: Sisko

First Offiver: Riker

Chief Medical Officer: Bashir (I was going to go with The Doctor here, but his being confined to sickbay and potential malfunctions pushed me to the best non-hologram doctor in Starfleet)

Chief Engineer: LaForge

Aux Staff: Data for highly fast and accurate calculations, Jadzia for the experience, and I am going to trade 3 other aux staff members for O'Brien, that LaForge/O'Brien fix-anything dream team.

Wild Card: I mean the most powerful there by far is Q, but you have a high risk of him fucking you over, or him getting kicked out of the collective again, which would make him worthless. This would make Obi Wan as the safe choice, Yoda seems like he would actually be a hindrance on a Starfleet vessel. I choose Obi Wan.

Ship: The Orville. I love the Defiant and everything, but the Orville is clearly more advanced than it and any other Starfleet ship. The Orville is shockingly maneuverable, and seems like it could make quick work by circle strafing Federation targets, ideally this could prevent a transporter lock as well, as Orville currently lack transporters. It's also wildly faster than any ship Star Trek ship in pure speed.
