I really like Bavaria Blu. It's camembert + blue cheese, but not as heavy on the blue as something like a Gorgonzola. Not that I don't love Gorgonzola. Also always really liked Leerdammer and can't go wrong with a simple Gouda, really.

Cheddar cheese is the best and most versatile IMO. I love it smoked and I love it with jalapenos and other spices.

I also love Roule which is a French soft cheese roll with garlic and herbs.

The Herb de Provence hard white cheese at Whole Foods is by far the best cheese out there for snacking with crackers and fruit. I can't for the life of me find it online or what kind it is though.
