I'm in the market for a flight stick myself, and have been doing some research into this. Whether you're on PS4 or Xbox One, there are "only" 2 official flight stick options for AC7 at the moment.
What's available are the Thrustmaster T.Flight Hotas 4 / One Flight Stick and the Hori Ace Combat Flight Stick. If you want good PC compatibility for games like Elite Dangerous or War Thunder, then your best choice is the Thrustmaster T.Flight Hotas 4 / One. The Hori AC Flight Stick, while aesthetically pleasing to look at, is not that great.
Looks aside, the Hori is detected on PC as a gamepad/controller, and not as a proper flight stick; the throttle won't work like it should. Unless Hori makes an updated Windows driver or you want to play with PC controller remapping, I would recommend passing on it for that reason alone.

Cost wise, the Thrustmaster goes for around $80, and the Hori retails for $200. At the moment, Best Buy has the Thrustmaster currently on sale for $56.99, but it's been as low as $35. And if you were gaming on PC exclusively, you could buy a far better flight stick/throttle setup what the Hori costs.
Beyond that on console, there is potentially the option of picking up a converter device like the CronusMAX Plus or the Titan Two in tandem with a better PC compatible flight stick/controller, and attempting to make that setup work on your console of choice.
Not AC7, but here's someone on YouTube who took a CronusMAX Plus and an old PlayStation One dual analog joystick, and made it work with RIGS for PSVR.
I wish there were more choices, and this route might be the solution for what I'm looking for (a good console/PC combo).
